The Legacy of the Artisan Baker: Hundreds of years ago most families baked their own breads. Rustic loaves were mixed, kneaded, shaped and left to rise in family kitchens before being carted to communal ovens watched by a village elder who would carefully guard the loaves as he tended the fire. Eventually this role developed in the trade of village baker, having gathered the skills, techniques, recipes and methods from the local home bakers and their centuries of baking experience.
At Rudi's Organic Bakery, we hold to the traditions of this village baker, following the natural process – as in making great wine or cheese – preserving the art of breadmaking for this generation and generations to come.
