Eggplants are a member of the nightshade family, related to the tomato, potato and bell peppers. They grow on vines like tomatoes and eggplant varieties can vary from small and round to long and plump. The American eggplant, or globe eggplant, is classically deep purple and shiny with a spongy texture and mild bitterness.
Eggplant is best when cooked as it reduces the bitter and unlocks a bounty of complex flavors.
Eggplant is sensitive to both cold and hot, and is ideally stored uncut and unwashed in the refrigerator’s crisper. Once the skin is cut, eggplant will decay very quickly. To test for ripeness, depress the skin gently with your finger tip. If it springs back, it is ripe and ready to eat!
Eggplant is low in calories and high in potassium. A 3 ounce serving contains 28 calories.
