**Due to USDA regulation all "raw" almonds grown in California must be subjected to a "flash" steam pasteurization process in order to protect the consumer from pathogens. Although "pasteurized," California raw almonds still have the taste and texture of a raw almond, will sprout, and according to research, pasteurization causes little to no loss of nutrition. These almonds are PPO free (propylene oxide free) and have had no chemicals applied in processing.
