More commonly known simply as the black bean, the black turtle bean is a frequent fixture in Latin American dishes, particularly frijoles negros, which translates to “black beans” and is often served with rice. The curious name, “turtle bean,” derives from the legume’s hard shell.
The black bean originated in the Americas, but its use didn’t become widespread in the United States until the mid-1800s, following the Mexican-American War. Today, it's popular worldwide. Black beans are a great source of soluble fiber, folate (vitamin B9), iron, magnesium, and phosphorus, and their high protein content makes them a favorite choice for vegetarian or vegan diets.
Although the most widely known uses for black beans in the US are savory Latin American dishes, their potential uses are endless and varied; for example, black beans sticky rice is a Thai dessert made with black beans, rice, coconut milk, and palm sugar. And while our black beans are a great meat substitute, Azure customers love them in meat dishes, too. Try pairing them with sweet potatoes as a flavorful and filling base for veggie tacos, or mix them in with your favorite taco meat for a more traditional dish!
