Welcome the colder nights with some oven roasted chestnuts.
Chestnuts are pleasantly sweet and flavorful. They are high in vitamin C, minerals, such as potassium, copper and magnesium, amino acids and antioxidants. The Native Americans treated chestnuts as their staple foods, employed them much like modern-day potatoes.
To roast fresh chestnuts, cut a shallow slice through the skin, place in a covered pan and bake in a HOT oven at 375 until the nuts are tender. Time in the oven is about 10 -15 minutes.
*It is much easier to peel the shells if you cover the chestnuts with a towel and let cool for a couple minutes.
