The sugar in our organic vanilla extract forms a minimal percentage of the product (less than 1g per teaspoon). It helps extract the flavor by softening the beans and keeps the vanilla compounds in suspension. This improves product clarity. (Vanilla extracts with no added sugar often look cloudy.) While some producers use corn syrup, we only use 100% all-natural crystalized organic cane sugar because we prefer the reliable quality and taste.
