Zucchini Squash in recent years has overtaken other types of summer squash in popularity as a fresh and cooked vegetable. Zucchini has a stronger, zestier flavor than the summer crooknecks and straightnecks. A favorite way to enjoy zucchini is to eat it raw either in a salad or as a party dip.
Zucchini is a very good source of conventional anti-oxidants such as Vitamin C, manganese and Vitamin A. It packs a second powerful punch in the favor of eye health in that it is rich in the carotenoids lutein and zeaxanthin.
Zucchini maintains its anti-oxidant levels when steamed lightly- even after having been frozen. Its anti-oxidant levels are decreased when it is boiled or microwaved. Of course, zucchini is wonderful plain and raw too!
An optimally ripe zucchini will have a shiny skin that is not too thick or hard. Store in the refrigerator in an airtight container- do not wash before storing.
If you are freezing your zucchini abundance, a steam blanch is better than a water blanch as fewer of the health-giving nutrients are lost with steaming.
