The secret ingredient that makes balsamic vinegar so special is grape must, an unfermented juice made of crushed whole grapes—including the stems, seeds, and skins. The grape must is boiled down to a thick, syrupy liquid and aged in wooden barrels, where it first ferments, then slowly turns into vinegar as bacteria break down the alcohol. More grape must equals a sweeter, smoother, and thicker vinegar, and our organic balsamic vinegar is made with 20% grape must.
